Given that it continues too hot for rational thought, I am today sharing something more useful in such Horrible Heat: my Banoffee Ice Cream recipe.
It’s dead easy, and it’s a good alternative to banana bread in using up overripe bananas.

You need:
1 pt double cream
1 tin caramel (I use Carnations, I’m sure there are other versions available. I did try to make my own but that was a bit of a failure)
However many ovverripe bananas you have, mashed: 2 minimum, I’d say
Chocolate flakes
Whip the cream, then stir in the caramel, the mashed bananas and the chocolate flakes. Pour into freezable containers and leave to freeze.
It’s soft scoop, by the way, even if you don’t stir it occasionally during the freezing process.
